We work with our own home-grown varieties, chosen unhurriedly and served by a team that knows them well and explains them without any posturing. The product matters to us, but so does everything around it: the temperature of the room, the welcome at the door, the way a new member finds a seat at the table within ten minutes. Over the years, what has grown here isn’t a clientele but a community — people of different trades and different ages who share a similar understanding of rest and of respect for others.
